My take on Blueberry muffins - easy recipe
I must admit, I am not like the best cook or baker in the world, but I like to try things out here and there, be creative and adventurous. There are a few things I can make well and that usually turn out delicious (hihi).
One of those things are blueberry muffins. I looove blueberry muffins.
I tried out many recipes, and could not really find the one I liked best, so in the end I combined the parts I liked and created my own version.
So, if you are looking for an easy peasy but super delish recipe for those chunks of pure happiness, then look no further - I have a great recipe for you to try out!
This is how I make them:
Ingredients for 12 muffins:
- Flour - 390 g (all-purpose will do)
- Baking powder - 2 teaspoons
- Pinch of salt
- Sugar - 50g (I used caster sugar)
- Oil - 120 ml (I used sunflower oil)
- Eggs - 2
- Sour cream - 300 ml (you can add even a bit more, if you want the texture to be more creamy)
- Vanilla extract - 1-2 teaspoons
- Fresh blueberries - as many as you like (In 6 of the 12 muffins I also added milk chocolate chips and it is yuuum)
So, that would be all ingredient wise. Now for the preparation steps:
- Turn on your oven and preheat to 200c.
- Mix the flour, baking powder and salt together in a large bowl - with a spatula.
- In another bowl - mix the eggs and sugar with a whisk until it looks smooth and has a nice yellowish colour - then mix into it the oil, sour cream and vanilla extract (I do all of this by hand, but if you prefer an electric mixer, go for it).
- Add the dry mixture (flour, baking powder and salt) very slowly into the egg mixture (wet ingredients). I do it in a few episodes, just because it is easier to mix - first a bit of the dry mixture, then again a bit and then the last chunk of it. I also mix this with a spatula by hand, but an electric mixer will be okay too.
- The mixture will be very sticky and thick (dense) and that is okay.
- Then add the delish and fresh blueberries into the mixture - if you wish to make a combination of chocolate chip and blueberries for all 12 muffins, then add the chocolate chips in this phase together with the blueberries. If you wish to add some chocolate chips only into a few muffins, then wait with the chocolate for now.
- Take your muffin form (tin) and put the paper liners (cases) into it.
- Fill each mould (is that the correct word? haha) with your beautiful mixture - use a soup spoon for that. Here you can play with the chocolate chips if you wish to add some to a few muffins - put a bit of mixture in a mould then put some chocolate chips and then again the mixture and then on top some more chocolate chips and/or blueberries as decoration. I usually add some blueberries on top of the mixture too.
- Bake the muffins in your preheated oven for about 25 minutes, or until the toothpick comes out dry (out of the muffin).

One cute little tip to make your life easier - for the non-bakers (like myself) between you, but also for the baking enthusiasts of course - prepare all your ingredients and the right measurements before you start mixing and preparing stuff. It really helps to have everything ready and laid out! It is less stressful this way and less stress is always good, right?
